2. CLEANING<\/h4>\t\t\t\t\t\t

We separate all impurities from the hazelnuts and the good fruits from the empty ones. 3. SORTING HAZELNUTS IN SHELL<\/h4>\t\t\t\t\t\t

The operation of sorting hazelnuts in shell is performed with special machines called grading machines that use oscillating screens with 14 to 20 mm holes.<\/p>\n<\/div>\n\n\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\n\t\t\t\t\t\n\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t<\/div>\n\t\t\t\t\t

This is done by subjecting the hazelnuts to a temperature of about 150\u00baC for about 30 minutes to remove residual moisture and enhance the fruit’s characteristic aromas.
